Traditional Indian dahi vada with masala yoghurt and imli tamarind chutney, served with paprika-roasted butternut, capsicum, and pickled chilli. Paired with a Moroccan-inspired salad of carrot, celery, asparagus, parsley, and spinach with lemon dressing, plus organic brown rice sprinkled with masala moong crumb.
